Red Velvet Cake - Nancy


RED VELVET CAKE  - Nancy Evans   1986

1 & ½ cups sugar

2 & ½ cups self-rising flour

1 cup buttermilk

1 & ¼ cups vegetable or corn oil

2 eggs

1 tsp baking soda

1 tsp vanilla
1 oz bottle red food coloring

Beat eggs first, then add sugar. 

Sift flour & baking soda, alternating with buttermilk & oil.

Add flavoring & food coloring last.


Bake in 3 round 9 inch pans lined with wax paper, for 20-25 minutes in preheated 350 degree oven.

FILLING:

8 oz Pkg cream cheese

1 stick butter

1 box powdered sugar

1 cup nuts (chopped pecans)

 Warm cheese & butter to room temperature, mix together.

Add sugar & nuts.

Spread on cooled cake.
