Lemony Sugar Cookies


LEMONY SUGAR COOKIES


2/3 Cup Shortening

1 Cup Sugar

1 Egg

1 TBSP grated Lemon peel

1 TBSP Lemon juice

2 Cuts sifted all-purpose Flour

1 tsp Baking Powder

½ tsp Salt

1 Cup finely chopped pecans (optional)


Thoroughly cream shortening & sugar.

Add egg, lemon peel, and lemon juice.  Beat well.


Sift together dry ingredients and add to creamed mixture.  Mix well.

 Stir in nuts.

 By spoonfuls, drop on to greased cookie sheet.


Bake 350 degrees for 12-15 minutes.


Cool slightly before removing from pan.
