Coca Cola Cake


COCA COLA CAKE                    Suzanne 1984 (St. Charles)

2 cups unsifted flour

2 cups sugar

2 sticks butter

1 cup coca cola

½ cup buttermilk (or ½ cup milk + 1 & ½ tsp vinegar or lemon juice)

2 beaten eggs

1 tp baking soda

1 tsp vanilla

1 & ½ cups miniature marshmellows

Combine flour & sugar in a mixing bowl.  Heat butter, cocoa, & Coke to boiling.

Pour over flour/sugar mixture.  Mix thoroughly.  Add buttermilk, eggs, soda, vanilla, & marshmellows.  Mix well.  This will be a thin batter with marshmellows floating on top.

Bake in a flat pan 1” deep (Jelly roll pan)

Bake 350 degrees for 25 minutes.

Ice while hot.

Icing

½ cup butter

3 TBSP cocoa

6 TBSP Coke

1 box confectioners sugar

1 cup pecans

Combine butter, cocoa, & Coke.  Heat to boiling.  Pour over confectioners sugar.  After beating well, add 1 cup chopped pecans.

Spread over hot cake.
