Polynesian Chicken

Polynesian Chicken

 Serves 4 - A not-too-sweet and savory dish with tender chicken and light spices that you're sure to love. Wonderful with rice.   My note: I fixed this in 2009 for the Branson Lakeside RV Park in the big electric skillet with 5 lbs chicken, doubled everything else – it was GREAT.


·         1 tablespoon olive oil
·         1 teaspoon salt
·         1 teaspoon paprika
·         1/2 cup flour
·         2 lbs chicken pieces (boneless or otherwise) (pieces are better than large ones)
·         1 cup orange juice
·         2 tablespoons brown sugar
·         2 tablespoons vinegar
·         1 teaspoon basil
·         1 teaspoon ground nutmeg
·         1 1/4 cups sliced peaches

Directions

1.    Heat oil at a medium temperature in a skillet large enough for all ingredients.

2.    Mix the salt, paprika and flour in a pie plate or other shallow dish.

3.    Coat chicken with flour mixture.

4.    Add the coated chicken to the pan and brown both sides (about 5 min.)

Mix the rest of the ingredients EXCEPT THE PEACHES and add to the pan.

6.    Simmer covered for 35-40 minute or until chicken is fully cooked.

7.    Add the peaches and simmer for another 5 minute.
