Doctor Bird Cake

DOCTOR BIRD CAKE – Bonnie Arnold  1979

3 cups sifted flour

1 tsp baking soda

1 tsp cinnamon

2 cups sugar

1 tsp salt

1 ½ cups cooking oil

1 8-oz can crushed pineapple with juice

1 ½ tsp vanilla

3 eggs

2 cups ripe diced bananas

1 cup crushed nuts

Mix together dry ingredients, except nuts.

Mix together other ingredients.

Mix the two mixtures – stir, do not beat.

Add nuts.

 Pour into greased & floured 9 inch tube pan

Bake at 35 degrees about 1 hour & 20 minutes

Let cool 15 minutes, remove from pan.
