EGG CASSEROLE


Here is how I made one, but I just put in it whatever I have on hand, or whatever I think to pick up at the store:

12 extra-large eggs – mix & add a little water.  Salt & pepper to taste.

1 lb. sausage – fried & torn in little pieces

Onion diced

Squash diced (optional)

Fresh spinach chopped (optional)

Tomato diced

Mushrooms sliced

Cheese Shredded (I use Colby-Jack, my favorite)

 All of the ingredients above are just to your own preference as to which ones and how much to put in the dish.  The more quantity of vegetables that you put in, the more eggs you need.

Spray dish with Pam or other preference.

Spread the fried sausage on bottom of dish.

Layer the cheese, then the vegetables on top of the sausage.

Pour egg mixture on top, be sure the other ingredients all get wet.

Cook 300 degrees for 30 minutes.

Then cook at 325 degrees for about 20-30 minutes or until done – test with toothpick.  The more eggs and ingredients, the longer it takes to cook.
